 Our EVOO is extracted in a modern Alfa Laval continuous processing plant. Below is a description of the process.
 
STEP 1 - DEFOLIATING AND WASHING
 
The freshly harvested olives are placed on a conveyer belt where leaves are first removed through powerful airflow generated by an electric fan. The washer then removes any remaining debris from the olives. The clean sparkling olives then travel to the crusher.
 
STEP 2 - CRUSHING
 
The whole olives enter a purpose built crusher, where they are crushed to produce olive paste. The paste then travels to the malaxers.
 
STEP 3 - MALAXING
 
This is the temperature controlled stirring of the olive paste. Malaxing will join the microscopic oil droplets in the olive paste together, so the oil can be separated. The paste is pumped into the Malaxation tanks and water flows through the cavities, heating the olive paste without contacting it. At the same time the paste is stirred.
